Yes, wetland technology has already been applied for wineries effluents. Depending on the size of the winery (i.e., flow rates), the complexity of the system differs, from one stage bed to multiple stages. For example, you may need in a multiple system an equalization tank - vertical flow bed for raw wastewater (first stage) - Horizontal SSF beds (second stage) - FWS (third stage). But each case is studied separately in order to produce the optimum design.

I would suggest using constructed wetlands to treat vinery wastewater. The temporary bigger load after harvest should be equalized in a pond, but during the rest of the year you can use reed beds to treat effluents. The equalizing pond can provide nutrients, which are mostly not really present in vinery wastewater. Hope I could help.
