I would agree with Dr. Villa that it is important not to misinterpret the results. A properly sized and maintained grease interceptor will substantially reduce the grease loading on the sewer. It is also possible to introduce microbial cultures which are efficient grease degraders and which will lead to more complete degradation of the long chain fatty acids.
