Virtual water use and overuse: Not watching from the water tower

Water is a special subject for Switzerland. The Alps function as a water tower for Europe.But it turns out that most of the staggering 4.6K litres of water that each resident of Europe uses each day does not flow down theRhine or the Rhône.

Because most of it is virtual water . As water expertKlaus Lanz pointed out at the talk, only in the last decade have we come to appreciate how much water is used in the production of goods and services, and especially food.

That is called virtual water, and most production takes place in the developing world. Which means that 3.6K litres per day, per person, is actually swilling around in a far off land.
