You could use QGIS (https://qgis.org/) o create a new GIS project for your irrigation canal network. Set the correct coordinate reference system and other project properties. Then you need to create a line vector shape file and need to think about what fields/properties to store with each canal (for instance length, width, depth, owner, type, material, maximum flow, canal class, etc.). Even though some of these cannot be obtained from remote sensing images, it is good to include these for later use. Load the remote sensing image and start digitizing. There are many tutorials for doing this, see for instance https://gisrsstudy.com/gis-tutorial/qgis-tutorial/ or https://docs.qgis.org/3.22/en/docs/training_manual/index.html. You could use a point shape file to indicate location of pumps, etc. I hope that this helps...

Hi Niva,
In addition to recommendations of Maarten, you will need the elevation data for the terrain where the canal should be designed. A good source of elevation data is STRM 30 which can be downloaded free of charge from USGS EarthData website (https://earthexplorer.usgs.gov/). The elevation data are provided for a grid with distances of 30 m in north and east direction.
